RECIPE OF THE BROTHERHOOD
Jenlain's Beer Soup

 

For 4 people

Ingredients :

 

  • 1 onion.

  • 1 clove of garlic.

  • 100 gr of soft butter.

  • 50 gr of flour.

  • 1 liter of Jenlain beer.

  • 25 cl of poultry stock.

  • 15 cl of liquid fresh cream.

  • 3 egg yolks.

  • 8 slices of bread, diced and fried.

  • Sprigs of chervil.

 

 

Preparation of the recipe :

 

Sweat a finely chopped onion and two cloves of garlic crushed in 100 gr of butter.Add the flour and finish like a roux.Pour 1 liter of Jenlain beer and 25 cl of chicken stock.Mix with a whisk until the Off the heat, add 1.5 dl of liquid crème fraîche mixed with 3 egg yolks. Serve with fried croutons and sprinkle with chervil sprigs. This soup is also delicious served with a poached egg.
